Banana ice cream

We have had some great weather last few days, it looks like summer is really near, and even with this current situation happening it gets you in a better mood.

So I thought of what kind of summer dessert puts me in a good mood regardless if it's sunny or grey outside, and it was a no-brainer - it is ICE CREAM for sure!!

I love ice cream, chocolate, milky, caramel, fruity, whatever it is - I LOVE it! :D

In our fruit basket there are always 2-3 bananas laying around, if it gets down to one or two it is alarm that we need to buy more. We use bananas for breakfast on toast, in smoothies, oatmeals, pancakes etc...

So currently as we don't shop that often, we limit ourselves to go to a supermarket once per week, we buy more bananas than usual. Yesterday I found that 6 of them are too ripe and

I needed to find a way to use them quickly.

I looked in the fridge, and there was a can of coconut cream there and I knew it - I need to make some ice cream!

There is actually no recipe for this, because you can add whatever you want as long as you get a good consistency, smoothie like texture, you'll have an ice cream ready as soon as it firms up in your freezer.

But to make things easier for you, I will write here what I used to make chocolate ice cream and caramel ice cream :)

Chocolate ice cream:

- 3 ripe bananas

- 1/2 cup coconut cream

- 3 tbsp raw cacao powder

If you like more sweeter taste, add 3 pitted dates to this mixture. Blend everything until smooth and freeze for at least 4 hours before serving.

Caramel ice cream:

- 3 ripe bananas

- 1/2 cup coconut cream

- 3 tbsp dulce de leche

Process is the same as for chocolate ice cream! :)

This recipe is great, it's kids friendly, as there is no refined sugar here (except for dulce de leche, but you can substitute that with dates and vanilla extract), it is versatile, bananas are great base for every flavour.

As I said in the start of this post, I love ice cream, so I already have another idea for a healthy ice cream, that you can enjoy this summer - stay tuned!
