Inverted banana peanut butter cake

There are a lot of versions for banana cake, banana loafs of banana muffins. I made quite a few batches of this cake, because I really love it, it is a great choice to have for snack, even better in the morning if you like sweet breakfast or brunch. You can make it dairy free, egg-free, gluten free, flourless, the choices are limitless and that is the beauty of it.




But I have never made an inverted banana cake, so this one is a new one for me.

It is definitely not a regular banana cake that we are all used to.






It might not look that handsome and attractive to you from this pictures, but trust me - the taste is there! Don't judge it only by the looks :D


When you combine peanut butter, baked bananas and fresh strawberries life just gets better! Do you agree? And then you add a cake on top??? What???


This just might be my ultimate, quickest dessert I have ever made, and it tastes so good.




So, let me tell you what you will need.


I'm sure you all have this already in your kitchen cupboards. :)



Ingredients:


- 280 g plain flour

- 150 g sugar

- 2 tsp baking powder

- pinch of salt

- 180 ml milk

- 4 tbsp peanut butter

- 2 tbsp oil

- 1 egg

- 2 tbsp butter

- 4 tbsp brown sugar

- 1 tsp vanilla extract

- 1/2 tsp cinnamon

- 4 ripe bananas


Use a pan or skillet that you can later put in the oven, so make sure there are no plastic handles or parts that could melt when you bake the cake.

I used a 8 inch (20cm) cake pan for this, and it works really well.


Start by melting the butter in the pan, add brown sugar, cinnamon and vanilla extract, cook it on medium heat until well incorporated. Turn off the heat, slice 4 bananas in half (lengthwise) and place across the pan, cut side down.


Now, preheat your oven to 180 C and start making the cake mixture.


Combine separately dry and wet ingredients, stir dry mixture into wet and mix well, making sure there are no lumps, and the mixture is smooth and well combined. Pour the cake mixture over the bananas and bake for 30-40 mins.


When the cake is ready, leave it to cool for 10 min before turning the cake upside down onto a serving plate.



Decorate with some icing sugar and serve with fresh strawberries.
