Peach & Raspberry galette
For a while now I wanted to make this famous galette dessert.
The crumbly crust with fresh fruits - I knew this could only be the best combo ever! Maybe that's why I didn't try it earlier!
When I was searching for a good and easy recipe I came across a lot of different ones, but at the end I used two different ones, and I wasn't wrong. It turned out perfectly!
It's a perfect summer dessert, it's so quick to make and everyone will love it!!
You can either make a big galette with 1 filling of choice, or you can make a few mini galettes from this dough and fill with different fillings. :)
The recipe for the crust is basic and you can use all kinds of fruits, cream cheese filling, pudding, cream, just about anything you desire, it's so versatile!
Ingredients you will need to make this crust are:
- 300 g flour (half plain, half strong white)
- 2 tbsp powdered sugar
- 150 g unsalted butter
- 1 egg
- pinch of salt
- zest of 1 lemon
- drop of vanilla extract
- 2/3 tbsp cold water if needed
Start by combining flour, powdered sugar, salt and lemon zest. Mix all together.
Add butter and using your hands combine it to the flour mixture. You should have a sandy like mixture at this point, but add egg and a drop of vanilla extract and knead all together. The texture of the mixture should be compact and able to be rolled out, if it crumbles add 1 tbsp of cold water.
Roll out the dough to 1cm thickness. Try to roll it out into a round shape, or according to shape of the baking mould or tray you will use for baking. I personally find round shape the easiest one. :)
So, step 2 before you add the fruits!
With using fresh food there is always a risk of getting a soggy bottom crust which is really not great and we will all agree - it doesn't taste good as well...
In order to avoid this you'll need to prepare the following:
- 2 tbsp almond flour
- 2 tbsp powdered sugar
- 1 tsp cornflour
Combine this in one small bowl, and sprinkle it over the crust before you add the fruits, It will absorb all the excess water from fruits and it'll keep the crust nice and crumble.
And the final step - add prepared and chopped fruits to your galette, fold the edges and if you like extra crunch sprinkle with some sliced almonds.
Bake galette on 180 C for 30 min.
I served my peach and raspberry galette with vanilla ice cream. It is not needed to say that it was so flavourful and delicious!
