Macarons are my passion. Ever since I tried them I was determined to learn how to make them. It wasn't easy, and I made some terrible batches of macarons during that learning process. But at the end all those failed trials and attempts finally paid out. And I can now say I know how to make French Macarons.
The technique I'm using is classic french method, and I will continue using just that one.
For a perfect macaron shell you'll need:
- 70 g egg whites (room temperature)
- 50 g caster sugar
- 100 g almond flour
- 100 g powdered sugar

For the macaron filling I used raspberry vanilla buttercream, but you can use anything you like. I love buttercream because it gives that nice fresh taste, and it melts in the mouth :)
If your macarons can last a day or two in the fridge, they get even better!
Keep them in an air tight container in the fridge.

- 2 tbsp softened butter unsalted
- 1 tbsp cream cheese
- 1/2 tsp vanilla extract
- 120 g powdered sugar
- 2 tsp raspberry powder
- 1 tsp dry raspberry
