Raw mini chocolate cakes

Raw cakes are getting more and more popular, they are so easy to make and within minutes you will have healthy and delicious, refined sugar free dessert.

I love to experiment with textures and different tastes.

But this time I chose to make a raw chocolate cake.


This recipe has 3 parts:


- chocolate shell

- cashew cream

- bliss ball


I went a bit crazy here, experimenting with different shapes, think I might even complicated things for you, but fear not, as I will explain to you how you can make them in a really easy way :)



You can make this dessert using a muffin or a cupcake mould. Just use the bliss balls as your base, cashew cream as your filling and melt some chocolate on top.


Ok, let's write what ingredients you will need for this!


Recipe:


Bliss balls

- 5 medjool dates

- 3 dried figs

- 2 tbsp melted coconut oil

- 1/2 cup pecans (or any other nuts)

- 1/4 cup rolled oats

- 1 tbsp raw cacao powder


Using a blender or food processor, first blend figs and dates together until they form a paste, add the rest of the ingredients and mix until fully combined.


Cashew cream

- 1 1/2 cups cashews (soaked in the water for min 4 hours or overnight)

- 1/4 cup almond milk

- 1 tsp vanilla extract

- 2 tbsp melted coconut oil

- pinch of salt


Blend all ingredients together on high speed until you get a fine smoothie like mixture, don't worry if you think it is too runny, it will firm up when you chill the dessert.


*You can always add some fresh fruits to this cashew cream mixture if you like, I usually love to add strawberries or raspberries as they go great with chocolate base :)




At this point, you want to start assembling your dessert, if you are using cupcake mould, first put your bliss ball mixture to the base, using your fingers make sure it is pressed down, pour cashew cream mixture on top and leave in the freezer to set for at least 30 mins.


While your dessert is chilling, start melting your chocolate.

I love using chocolate with 70 % cacao or even more, but you can use your favourite.




Take the cakes from the freezer, pour chocolate on top, leave to set for a few minutes.

You can serve them immediately :) Add some fresh fruits, and enjoy your healthy, guilt-free dessert!
